Ok so the first thing you gotta know about me is that I’m no Martha Stewart, I’m an amateur baker at best but hey here goes nothing. I decided to bake a birthday cake to celebrate Hunting for George’s 8th Birthday and the 3 Holes Vegan Chocolate Cake by Yumi Styne’s from the ‘The Zero Fuck Cookbook’ was the winner. Now I’m no vegan so that’s not the reason I chose this recipe. I chose it because it looked super easy and well, that’s what The Zero Fucks Cookbook is all about.
INGREDIENTS
200g self-raising flour
100g soft brown sugar
100g sugar
50g dutch (unsweetened) cocoa powder, sifted
1 teaspoon baking soda
1/2 teaspoon salt
120g dairy-free margarine, melted
2 tablespoons white or apple cider vinegar
1 teaspoon vanilla extract
150ml soy milk or other non-dairy milk substitute
Strawberries, raspberries or blueberries, to serve (optional)
ICING
300g icing sugar
150g dairy-free margarine
2 tablespoons glucose syrup (optional)
1 teaspoon boiling water
METHOD
1. Preheat the oven to 150°C. Line a 22 cm round cake tin with baking paper.
2. In a large bowl, mix all the dry ingredients together well to combine.
3. Make 3 holes in the mixture: 1 large, 1 medium and 1 small hole. Into the large hole, add the melted margarine. Into the medium hole, add the vinegar. Into the small hole, add the vanilla. Pour the soy milk all over the top, then mix the whole lot together until there are no lumps.
4. Pour the batter out into the cake tin (lick the spoon when you’re done) and bake for 18–20 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and leave to cool completely in the tin. (Trying to take it out earlier will result in the cake breaking!)
5. Make the icing by mixing everything together in an electric mixer until smooth. Spread over the top of the cooled cake and decorate with berries, if desired.
